Ingredients

  • Chosen Pure Avocado Oil Spray

  • 9 Ole Extreme Herb Tortilla Shell

  • 1 ½ lbs White Medium Shrimp, peeled/deveined with tails removed

  • 5 oz. chopped Mango

  • 1 Tbsp. of Jerk seasoning

  • 1 tsp. sea salt

  • 4 thinly sliced garlic cloves

  • ¼ bunch of finely chopped fresh cilantro

  • 2 limes, juiced

  • 4 oz. Queso Fresco, crumbled

  • 3 Tbsp. of salsa verde

Directions

  • Preheat oven to 425 degrees
  • In a medium bowl, place shrimp and lightly spray with avocado spray. Add salt, seasoning, and garlic. Toss for equal coating of shrimp. Wash hands.
  • Spray foil-covered pan lightly with Chosen Pure Avocado Oil spray
  • Bake 4-5 minutes until shrimp turns pink and opaque.
  • On other pan, lay out tortilla shells and lighlty spray with avocado oil. Place in oven to warm.
  • In a bowl, mix mango, lime juice, and cilantro.
  • Once the shrimp is done, take out the shrimp and shells from the oven. It’s time to assemble your tacos!
  • Take shell. Add 4 shrimp
  • Top with 1 Tbsp. of Mango salsa, 1 tsp. of Queso Fresco, and 1 tsp. of salsa verde.
  • Enjoy!

Notes

  • You may add 2 ounces of chopped red onion to Mango Salsa if desired. It adds a little more kick!
